September: Oatmeal Scotchies

If you are ready for fall, buckle up and find your mixing bowl because these are the cookies for you! The warmth from the cinnamon and the butterscotch just feel like a hug for your soul. Plus with the oatmeal in the cookies, one might argue that they could be a breakfast cookie.

Ingredients:
1 c butter
1 c brown sugar
½ c sugar
2 eggs
2 t vanilla
1 ¾ c flour
½ t cinnamon
1 t baking soda ½ t salt 3 c oats
1 ½ c butterscotch chips
In a medium bowl, combine flour, cinnamon, baking soda, salt, and oats. Set aside. In a stand mixer fitted with the paddle attachment or with a hand mixer, cream together butter and both sugars until light and fluffy. Beat in eggs and vanilla. Mix until well combined. Add dry ingredients and mix just until combined. Stir in butterscotch chips. Wrap in plastic wrap or in an airtight container and chill for at least one hour. Preheat oven to 325F. Scoop cookies onto baking sheet at least 2 inches apart. Bake 10-12 minutes. Let cool on baking sheet for at least 5 minutes before transferring to a wire rack to cool completely.
